Ingredients
  

For the Shamrock Pancakes:

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 1 ¼ cups milk
  • 1 egg beaten
  • 3 tablespoons melted butter
  • ½ teaspoon green food coloring or more for desired shade

For the Minty Drizzle:

  • ½ cup powdered sugar
  • 2 teaspoons milk
  • ¼ teaspoon mint extract
  • green food coloring optional

Instructions
 

Make Pancakes:

  • In a large bowl, mix flour, baking powder, sugar, and salt. In another bowl, whisk milk, egg, melted butter, and green food coloring.
  • Pour wet ingredients into dry ingredients and mix until just combined.
  • Heat a non-stick skillet over medium heat. Pour ¼ cup batter for each pancake. Cook until bubbles form and edges set, then flip and cook until golden.

Prepare Minty Drizzle:

  • In a small bowl, mix powdered sugar, milk, mint extract, and green food coloring until smooth.

Serve:

  • Stack pancakes on plates and drizzle with minty glaze. Serve immediately.

Notes

  • Make Ahead: Pancake batter can be prepared a few hours in advance and refrigerated.
