For the Shamrock Pancakes: 1 ½ cups all-purpose flour 3 ½ teaspoons baking powder 1 tablespoon sugar ¼ teaspoon salt 1 ¼ cups milk 1 egg beaten 3 tablespoons melted butter ½ teaspoon green food coloring or more for desired shade For the Minty Drizzle: ½ cup powdered sugar 2 teaspoons milk ¼ teaspoon mint extract green food coloring optional

Make Pancakes: In a large bowl, mix flour, baking powder, sugar, and salt. In another bowl, whisk milk, egg, melted butter, and green food coloring.
Pour wet ingredients into dry ingredients and mix until just combined.
Heat a non-stick skillet over medium heat. Pour ¼ cup batter for each pancake. Cook until bubbles form and edges set, then flip and cook until golden.
Prepare Minty Drizzle: In a small bowl, mix powdered sugar, milk, mint extract, and green food coloring until smooth.
