Ingredients

For the Salad:

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup sour cream or Greek yogurt
  • ½ cup salsa
  • 1 cup sliced black olives
  • 1 cup diced red onions optional
  • 1 cup diced avocado optional

Instructions

Cook the Ground Meat:

  • In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat and stir in taco seasoning, following the packet instructions.

Prepare the Salad Layers:

  • In a large bowl or on a platter, start by layering the refried beans as the base. Top with the seasoned ground meat.

Add Veggies and Toppings:

  • Layer the shredded lettuce, diced tomatoes, and shredded cheddar cheese. Add sour cream or Greek yogurt, salsa, black olives, and onions (if using).

Optional Toppings:

  • Top with diced avocado for extra flavor.

Serve:

  • Serve immediately, or cover and refrigerate until ready to serve. For the best texture, layer the ingredients just before serving.

Notes

  • Make Ahead: The salad can be made ahead, but layer just before serving to maintain freshness and crunchiness.
  • Customizing the Flavor: Add extra toppings like olives, jalapeños, or onions for more flavor. For a spicy kick, mix in some chili powder or hot sauce.
  • Serving Suggestions: Serve with crispy tortilla chips or soft tacos on the side to complete the meal.
  • Allergy-Friendly Options: For a gluten-free version, use gluten-free tortilla chips or skip them. Substitute dairy-free yogurt for a dairy-free version.
  • Storage Tips: Store leftovers in an airtight container in the fridge for up to 2 days. Keep the layers separate and combine just before serving for best results.
