Ingredients
  

For the Sesame Kale Noodles:

  • 8 oz noodles spaghetti or rice noodles
  • 4 cups kale stems removed and chopped
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • 1 tablespoon sesame seeds for garnish
  • green onions chopped, optional for garnish

Instructions
 

Cook Noodles:

  • Cook noodles according to package instructions. Drain and set aside.

Prepare Sauce:

  • In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger.

Sauté Kale:

  • In a large pan over medium heat, sauté chopped kale for 3–4 minutes until wilted.

Combine Noodles and Sauce:

  • Add cooked noodles and sauce to the pan with kale. Toss well to coat evenly.

Serve:

  • Garnish with sesame seeds and green onions if desired. Serve warm or at room temperature.

Notes

  • Make Ahead: Sauce can be prepared ahead and stored in the fridge for up to 2 days.
  • Variations: Add tofu, chicken, or shrimp for extra protein.
