2 tablespoons unsalted butter 1 tablespoon olive oil 1 small onion finely chopped 2 cloves garlic minced 1 celery stalk finely chopped 2 tablespoons all-purpose flour 3 cups seafood stock or chicken stock 1 cup heavy cream ½ cup white wine optional ½ teaspoon paprika ½ teaspoon salt ¼ teaspoon black pepper ½ lb shrimp peeled and deveined ½ lb crab meat or lobster meat ½ lb white fish fillets cut into chunks 1 tablespoon fresh parsley chopped, for garnish
