Ingredients
  

  • 2 cups pecan halves
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup heavy cream
  • 4 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt plus extra for sprinkling

Instructions
 

  • Step 1: Toast the Pecans – Preheat oven to 350°F (175°C). Spread pecans on a baking sheet and toast for 5-7 minutes until fragrant.
  • Step 2: Make the Caramel – In a saucepan, combine granulated sugar, brown sugar, heavy cream, and butter. Cook over medium heat, stirring constantly, until the mixture reaches 240°F (soft-ball stage).
  • Step 3: Add Vanilla & Pecans – Remove from heat and stir in vanilla and sea salt. Quickly mix in toasted pecans.
  • Step 4: Form Clusters – Drop spoonfuls of the praline mixture onto parchment-lined baking sheets. Sprinkle extra sea salt on top.
  • Step 5: Cool & Set – Let clusters cool at room temperature for about 30 minutes until firm. Enjoy!
