SAVORY FRENCH ONION MEATLOAF WITH TRUFFLE MASHED POTATOES

A hearty and flavorful dish featuring tender French onion meatloaf paired with rich truffle mashed potatoes. The combination of caramelized onions and truffle oil creates a comforting, savory meal perfect for any occasion.

For the Truffle Mashed Potatoes:
2lbsYukon Gold potatoespeeled and cubed
½cupbutter
½cupcream
2tablespoonstruffle oil
Salt and pepperto taste
Fresh parsleychopped (for garnish)
Instructions
Prepare the Meatloaf:
Preheat the oven to 375°F (190°C).
In a large mixing bowl, combine ground beef, ground pork, chopped onion, minced garlic, breadcrumbs, milk, egg, Worcestershire sauce, Dijon mustard, salt, pepper, and French onion soup. Mix until just combined.
Shape the mixture into a loaf and place it on a baking sheet or in a loaf pan. Bake for 45–50 minutes or until cooked through (internal temperature should reach 160°F/71°C).
Optional: For extra flavor, drizzle a little extra French onion soup on top during the last 10 minutes of baking.
Prepare the Truffle Mashed Potatoes:
Place the peeled and cubed potatoes in a large pot. Cover with water and bring to a boil. Cook until potatoes are tender, about 15–20 minutes.
Drain the potatoes and return them to the pot. Add butter, cream, and truffle oil. Mash until smooth and creamy.
Season with salt and pepper to taste, and garnish with fresh parsley.
Serve:
Slice the meatloaf and serve it alongside a generous portion of truffle mashed potatoes. Optionally, drizzle with any remaining French onion soup for extra flavor.
Notes
Make Ahead: You can prepare the meatloaf and refrigerate it before baking. Simply bake it on the day you plan to serve it.
Customizations: Add grated cheese into the meatloaf mixture for a cheesy twist or sprinkle extra cheese on top in the last few minutes of baking.
