Ingredients
  

  • 4 large eggs
  • 1 tablespoon butter or olive oil
  • 4 strips of bacon or turkey bacon
  • 1 ripe avocado sliced
  • ½ cup cherry tomatoes halved
  • 1 cup baby spinach or kale
  • Salt and black pepper to taste
  • Optional: hot sauce or everything bagel seasoning

Instructions
 

Cook the Bacon:

  • In a skillet over medium heat, cook bacon until crispy. Set aside on paper towels.

Sauté the Veggies:

  • In the same skillet, sauté cherry tomatoes and spinach (or kale) in a little bacon fat or oil for 2–3 minutes until wilted. Season with salt and pepper.

Cook the Eggs:

  • In a separate pan, melt butter over medium heat. Crack in the eggs and cook to your preferred style (sunny-side up, scrambled, or over-easy).

Assemble the Plate:

  • Divide cooked veggies and bacon between two plates. Add sliced avocado and eggs. Sprinkle with seasoning if desired.

Serve:

  • Serve warm with toast or roasted potatoes, if desired.
