SAUSAGE TORTELLINI SOUP

This Sausage Tortellini Soup is a hearty and flavorful soup made with Italian sausage, tender cheese tortellini, and a savory broth, all simmered together with vegetables and seasoned to perfection. It’s the perfect comforting meal for cold nights!

Ingredients
  

  • 1 lb Italian sausage mild or spicy, based on preference
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes, with juices
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package 9 oz cheese tortellini (fresh or frozen)
  • 1 cup baby spinach optional
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes optional, for heat
  • Salt and pepper to taste
  • Fresh Parmesan cheese for topping optional

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add the sausage, breaking it apart with a spoon, and cook for 5-7 minutes until browned and fully cooked.
  • Add the chopped onion to the pot and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 1 minute, stirring frequently.
  • Pour in the diced tomatoes with their juices, chicken broth, heavy cream, basil, oregano, and red pepper flakes (if using). Stir everything together and bring to a simmer.
  • Add the tortellini to the pot and cook according to package instructions, usually about 7-9 minutes, until the tortellini is tender and floating.
  • Stir in the spinach (if using) and cook for an additional 1-2 minutes until wilted.
  • Season the soup with salt and pepper to taste.
  • Ladle the soup into bowls and top with freshly grated Parmesan cheese, if desired. Serve immediately.

Notes

  • You can use ground turkey sausage for a lighter version of this soup.
  • For a more filling version, add extra vegetables like carrots, celery, or zucchini.
  • If you prefer a thicker soup, you can blend part of the soup and return it to the pot before adding the tortellini.
  • Leftovers can be stored in the fridge for up to 3 days. Reheat gently on the stove.
  • You can freeze this soup, but it's best to add the tortellini after thawing and reheating to prevent them from becoming mushy.
