This Sausage, Egg, and Cream Cheese Hashbrown Casserole is the ultimate breakfast dish, featuring savory sausage, creamy eggs, and gooey cream cheese baked with crispy hashbrowns. It’s a hearty, comforting meal that’s perfect for a crowd or a family breakfast!
1lbbreakfast sausagemild or spicy, based on preference
1package30 oz frozen hashbrowns (thawed)
8large eggs
½cupmilk
8ozcream cheesesoftened
1cupshredded cheddar cheese
½teaspoongarlic powder
½teaspoononion powder
Salt and pepper to taste
1tablespoonolive oilfor greasing the pan
Instructions
Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with olive oil or cooking spray.
Cook the sausage: In a large skillet, cook the sausage over medium heat, breaking it apart with a spoon, until browned and fully cooked (about 5-7 minutes). Remove from heat and drain excess fat.
Prepare the egg mixture: In a medium bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined. Set aside.
Assemble the casserole: Spread the thawed hashbrowns evenly in the bottom of the prepared baking dish.
Spread the cooked sausage over the hashbrowns.
Drop spoonfuls of softened cream cheese evenly over the sausage layer.
Pour the egg mixture over the entire casserole, ensuring that it’s evenly distributed.
Add cheese and bake: Sprinkle the shredded cheddar cheese over the top of the casserole.
Bake in the preheated oven for 40-45 minutes, or until the casserole is set and the top is golden brown and bubbly.
Cool and serve: Let the casserole rest for 5 minutes before slicing and serving.
Notes
You can substitute the breakfast sausage with cooked bacon or cooked ground turkey for a lighter version.
For a spicy kick, use hot sausage or add diced jalapeños to the casserole.
Feel free to add vegetables like bell peppers or spinach for added flavor and nutrition.
This casserole can be made ahead of time by assembling it the night before, then baking it in the morning.
