Ingredients
  

  • 4 salmon fillets about 6 oz each
  • 1 cup pineapple chunks fresh or canned, drained
  • 4 tablespoons unsalted butter melted
  • 3 cloves garlic minced
  • Juice and zest of 1 lemon
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley chopped (for garnish)
  • Lemon slices for garnish

Instructions
 

  • Preheat Oven: Preheat oven to 375°F (190°C). Tear 4 sheets of foil, each about 12x16 inches.
  • Prepare Sauce: In a small bowl, whisk melted butter, garlic, lemon juice, lemon zest, and honey.
  • Assemble Packets: Place each salmon fillet in the center of a foil sheet. Season with salt and pepper. Top with pineapple chunks and spoon sauce over salmon. Add lemon slices if desired.
  • Seal Packets: Fold foil over salmon and seal tightly into packets.
  • Bake: Place packets on a baking sheet and bake 18–20 minutes, until salmon flakes easily with a fork.
  • Serve: Carefully open packets, garnish with parsley, and serve hot.
