These Rotel Cream Cheese Sausage Balls are a spicy, cheesy, and savory bite-sized snack perfect for parties, game days, or a quick appetizer. The combination of cream cheese, sausage, Rotel, and cheddar makes them irresistibly soft and flavorful!

Ingredients
  

  • 1 lb ground breakfast sausage mild or spicy
  • 8 oz cream cheese softened
  • 1 can 10 oz Rotel, drained
  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups Bisquick or any biscuit baking mix
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions
 

Step No.1: Preheat Oven

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Step No.2: Mix Ingredients

  • In a large mixing bowl, combine the sausage, softened cream cheese, drained Rotel, shredded cheddar cheese, Bisquick, garlic powder, and onion powder. Mix well until fully incorporated.

Step No.3: Roll into Balls

  • Scoop about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used. Place sausage balls on the prepared baking sheet about an inch apart.

Step No.4: Bake Until Golden

  • Bake for 22-25 minutes or until the sausage balls are golden brown and cooked through. The internal temperature should reach 160°F (71°C).

Step No.5: Serve Warm

  • Let them cool slightly before serving. Serve with ranch dressing, honey mustard, or your favorite dipping sauce.

Notes

  • Use Spicy Sausage: For extra heat, use spicy breakfast sausage.
  • Drain Rotel Well: Too much liquid will make the mixture too soft.
  • Don’t Overmix: Overmixing can make the sausage balls dense instead of tender.
  • Cheese Variations: Try using pepper jack, mozzarella, or Colby jack for different flavors.
  • Make-Ahead Tip: Prepare and refrigerate the uncooked sausage balls for up to 24 hours before baking.
