Ingredients
  

For the Salsa:

  • 6 ripe tomatoes halved
  • 1 red bell pepper halved, seeds removed
  • 1 onion quartered
  • 2 cloves garlic peeled
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 tablespoon lime juice fresh
  • ¼ cup cilantro chopped

Instructions
 

Prepare Vegetables:

  • Preheat oven to 425°F (220°C). Place tomatoes, bell pepper, onion, and garlic on a baking sheet. Drizzle with olive oil, salt, and pepper.

Roast Vegetables:

  • Roast vegetables for 20 minutes until soft and slightly charred.

Blend Salsa:

  • Let vegetables cool slightly. Transfer to a blender or food processor. Add lime juice and cilantro. Blend until smooth or desired consistency.

Serve:

  • Taste and adjust seasoning with salt and pepper. Serve as a dip, topping, or side dish.
