ROASTED RED PEPPER HUMMUS

Roasted Red Pepper Hummus is a creamy, flavorful dip made with chickpeas, roasted red peppers, tahini, and spices. Perfect with pita, crackers, or fresh vegetables.

Ingredients
  

For Roasted Red Pepper Hummus:

  • 1 can (15 oz) chickpeas drained and rinsed
  • 1 cup roasted red peppers jarred or homemade
  • 3 tablespoons tahini
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1 tablespoon lemon juice fresh
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2–3 tablespoons water adjust for desired consistency

Instructions
 

Blend Ingredients:

  • In a food processor, combine chickpeas, roasted red peppers, tahini, olive oil, garlic, lemon juice, salt, and pepper.

Adjust Consistency:

  • Process until smooth. Add water 1 tablespoon at a time to reach desired consistency.

Serve:

  • Taste and adjust seasoning if needed. Transfer to a serving bowl and drizzle with extra olive oil, if desired.

Notes

  • Make Ahead: Can be prepared a day in advance and stored in the fridge.
  • Variations: Add roasted garlic, smoked paprika, or cayenne for extra flavor.
  • Serving: Serve with pita bread, crackers, or vegetable sticks.
  • Storage: Store in airtight container in fridge for up to 4 days. Stir before serving.
