These Roasted Garlic Idaho Potatoes are crispy on the outside, fluffy inside, and bursting with bold garlic and herb flavour. The perfect side dish for any meal, they’re simple, satisfying, and always a crowd-pleaser.

Ingredients
  

  • 2 pounds Idaho potatoes cut into 1-inch chunks
  • 6 cloves garlic minced (or use roasted garlic for a milder flavor)
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried rosemary or fresh, chopped
  • ½ teaspoon smoked paprika optional
  • 2 tablespoons fresh parsley chopped (for garnish)

Instructions
 

Preheat Oven:

  • Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.

Season Potatoes:

  • In a large bowl, toss the potato chunks with olive oil, minced garlic, salt, pepper, rosemary, and paprika. Ensure the potatoes are well coated.

Roast:

  • Spread potatoes in a single layer on the prepared baking sheet. Roast for 35–40 minutes, flipping once halfway through, until golden brown and crispy on the edges.

Serve:

  • Remove from the oven and sprinkle with chopped fresh parsley. Serve hot as a side with meats, fish, or veggie mains.

Notes

Make It Ahead:
You can parboil the potatoes earlier in the day for extra crispness, then roast when ready to serve.
Garlic Tip:
Use roasted garlic if you prefer a milder, sweeter flavor. Simply mash and mix it with the oil.
