Ingredients
  

Ingredients:

  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour
  • ¾ cup brown sugar packed
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup butter melted
  • 2 cups rhubarb chopped
  • ½ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions
 

Prepare Pan:

  • Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.

Make Crust:

  • In a bowl, mix oats, flour, brown sugar, baking soda, and salt. Stir in melted butter until crumbly.

Form Base:

  • Press half of the oat mixture into the prepared pan to form the crust.

Add Filling:

  • In another bowl, combine rhubarb, granulated sugar, cornstarch, and vanilla. Spread over the crust.

Add Topping:

  • Sprinkle remaining oat mixture evenly over the top.

Bake and Cool:

  • Bake for 30–35 minutes until golden brown. Cool completely before slicing into bars.

Notes

  • Make Ahead: Bars can be baked a day in advance and stored covered.
  • Variations: Mix strawberries with rhubarb for a sweeter filling.
