Ingredients

  • 1 tablespoon cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup vegetable oil
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring

For the Cheesecake Filling:

  • 8 oz cream cheese softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg yolk

For the Frosting (Optional):

  • 1 cup whipped cream or cream cheese frosting

Instructions
 

  • Preheat the Oven: Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • Prepare Cheesecake Filling: In a small bowl, beat cream cheese, sugar, vanilla, and egg yolk until smooth. Set aside.
  • Make Cupcake Batter: In another bowl, whisk together flour, cocoa powder, baking soda, and salt. In a large bowl, mix oil, sugar, egg, buttermilk, vanilla, vinegar, and red food coloring until combined. Gradually add dry ingredients and stir until smooth.
  • Assemble: Fill each cupcake liner halfway with red velvet batter. Add a spoonful of cheesecake filling in the center, then top with a little more batter.
  • Bake: Bake for 18–20 minutes, or until a toothpick comes out clean. Cool completely before frosting.
  • Frost (Optional): Top with whipped cream or cream cheese frosting for a beautiful finish.
