These Pumpkin Pie Tacos are a fun and festive twist on a classic fall dessert. Crispy taco shells are filled with a creamy pumpkin pie filling, then topped with whipped cream and your favorite pie toppings.

Instructions
Prepare taco shells (if baking): Preheat oven to 375°F (190°C). Mix the sugar and cinnamon together. Brush each tortilla with melted butter (or spray with cooking spray) and sprinkle with the cinnamon-sugar mixture. Arrange the tortillas on a baking sheet, draped over the bars of an upside-down muffin tin or arranged in a taco shell baking rack. Bake for 10-12 minutes, or until crisp and golden brown. Let cool completely. Alternatively, you can use pre-made hard taco shells for a shortcut.
Make pumpkin pie filling: In a large bowl, combine the pumpkin puree, sweetened condensed milk, cinnamon, ginger, cloves, and salt. Mix well until smooth and creamy.
Chill filling: Cover the bowl and refrigerate for at least 30 minutes to allow the filling to thicken slightly.
Assemble tacos: Fill each taco shell with the chilled pumpkin pie filling.
Top and serve: Top the tacos with whipped cream and your favorite toppings, such as caramel sauce, chocolate sauce, chopped nuts, sprinkles, or mini marshmallows. Serve immediately.
