Ingredients

  • 8-10 flour tortillas (6-inch)
  • 2 tablespoons melted butter (or cooking spray)
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 (15 ounce) can pumpkin puree
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • Pinch of salt
  • Whipped cream
  • Optional: Caramel sauce, chocolate sauce, chopped nuts, sprinkles, mini marshmallows

Instructions

  • Prepare taco shells (if baking): Preheat oven to 375°F (190°C). Mix the sugar and cinnamon together. Brush each tortilla with melted butter (or spray with cooking spray) and sprinkle with the cinnamon-sugar mixture. Arrange the tortillas on a baking sheet, draped over the bars of an upside-down muffin tin or arranged in a taco shell baking rack. Bake for 10-12 minutes, or until crisp and golden brown. Let cool completely. Alternatively, you can use pre-made hard taco shells for a shortcut.
  • Make pumpkin pie filling: In a large bowl, combine the pumpkin puree, sweetened condensed milk, cinnamon, ginger, cloves, and salt. Mix well until smooth and creamy.
  • Chill filling: Cover the bowl and refrigerate for at least 30 minutes to allow the filling to thicken slightly.
  • Assemble tacos: Fill each taco shell with the chilled pumpkin pie filling.
  • Top and serve: Top the tacos with whipped cream and your favorite toppings, such as caramel sauce, chocolate sauce, chopped nuts, sprinkles, or mini marshmallows. Serve immediately.

Notes

  • Taco Shells: You can use flour or corn tortillas for the taco shells. Baking them gives them a nice crispness, but you can also use pre-made hard taco shells for convenience.
  • Pumpkin Pie Filling: Make sure to use pumpkin puree, not pumpkin pie filling.
  • Sweetened Condensed Milk: Sweetened condensed milk is essential for the creamy texture and sweetness of the filling.
  • Toppings: Get creative with your toppings!
