Ingredients

  • ¼ cup pumpkin puree ensure it's 100% pumpkin, not pumpkin pie filling
  • 1-2 tablespoons maple syrup adjust to your sweetness preference
  • 1 tablespoon chia seeds for thickening and added nutrients
  • ½ - 1 teaspoon pumpkin pie spice or a mix of cinnamon, ginger, nutmeg, and cloves
  • ¼ teaspoon vanilla extract optional
  • Pinch of salt enhances flavors
  • Optional additions: ¼ cup plain Greek yogurt for extra creaminess and protein, a scoop of protein powder

Instructions
 

  • Combine Ingredients: In a jar or airtight container, combine the rolled oats, milk, pumpkin puree, maple syrup, chia seeds, pumpkin pie spice, vanilla extract (if using), and a pinch of salt. If adding Greek yogurt or protein powder, mix them in now.
  • Stir Well: Stir all the ingredients thoroughly until well combined. Make sure there are no clumps of oats or chia seeds.
  • Chill: Cover the jar or container and refrigerate for at least 4 hours, but ideally overnight, to allow the oats to soften and absorb the liquid.
  • Serve: The next morning, give the oats a good stir. If the consistency is too thick, add a splash more milk until it reaches your desired texture.
  • Add Toppings (Optional): Enjoy your pumpkin pie overnight oats as is, or enhance them with your favorite toppings.
