Ingredients
  

For the Crust:

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold unsalted butter cut into cubes
  • 3 –4 tablespoons ice water

For the Filling:

  • 1 15 oz can pumpkin puree
  • ¾ cup granulated sugar
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 2 large eggs
  • 1 cup evaporated milk

Instructions
 

Prepare the Crust:

  • In a bowl, combine flour and salt. Cut in butter until crumbly. Gradually add ice water until dough forms. Roll out and fit into a 9-inch pie pan.

Make the Filling:

  • In a large bowl, whisk together pumpkin, sugar, salt, cinnamon, ginger, and cloves. Beat in eggs, then gradually stir in evaporated milk until smooth.

Assemble and Bake:

  • Pour filling into prepared crust. Bake at 350°F (175°C) for 50–60 minutes or until a knife inserted comes out clean.

Cool and Serve:

  • Let the pie cool completely before slicing. Serve plain or with whipped cream.
