Ingredients

  • 1 cup chocolate cookie crumbs for base
  • 4 tablespoons unsalted butter melted

For the Pumpkin Mousse:

  • 1 cup pumpkin puree
  • 8 oz cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups heavy whipping cream

Instructions
 

Prepare Base:

  • Mix chocolate cookie crumbs with melted butter. Press into the bottom of a 9-inch springform pan. Chill for 10 minutes.

Make Pumpkin Mousse:

  • Whip heavy cream until stiff peaks form. Gently fold into pumpkin mixture until combined.

Assemble Cake:
