PROTEIN PANCAKES (FLUFFY, HIGH-PROTEIN, READY IN 15 MINUTES)

I created these protein pancakes because I was tired of dense, rubbery gym food that tasted like punishment rather than breakfast. What you get here is genuinely fluffy, golden pancakes that deliver 20-25 grams of protein per serving while actually tasting incredible. They are ready in 15 minutes and have become my favorite way to start any day, whether you are training hard or simply wanting a satisfying breakfast.

Ingredients
  

  • 1 cup cottage cheese or plain Greek yogurt packed into measuring cup
  • 1 cup old-fashioned rolled oats not instant
  • 4 large eggs
  • 2 tablespoons vanilla protein powder optional but recommended
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1 tablespoon butter or coconut oil for cooking

Instructions
 

  • Add cottage cheese, rolled oats, eggs, protein powder if using, baking powder, vanilla extract, and salt to a blender. Blend on high speed for 90 seconds until completely smooth and pourable. The batter should be thinner than traditional pancake batter, more like crepe batter.
  • Heat a non-stick skillet or griddle over medium-low heat and add a small amount of butter. Let it melt and coat the pan evenly. Medium-low heat is crucial because these pancakes need time for the inside to cook through without burning the edges.
  • Pour ΒΌ cup batter onto the griddle for each pancake and cook for 2-3 minutes until the edges look set and bubbles form on top. Flip gently and cook the second side for another 2 minutes until golden brown. The pancakes should be pillowy and pale golden, not dark brown.
  • Transfer cooked pancakes to a warm plate and cover loosely with foil to keep them warm. Repeat with remaining batter, adding a small amount of butter to the griddle between batches as needed.
  • Serve warm with your choice of toppings: maple syrup, fresh blueberries, Greek yogurt, sliced bananas, cinnamon, or honey. This recipe makes approximately 12-14 pancakes depending on size.

Notes

The key to fluffy protein pancakes is not overmixing the batter and cooking on medium-low heat so the insides cook through before the edges burn. Storage: store cooled pancakes in an airtight container in the refrigerator for up to 3 days, or freeze between parchment sheets for up to 2 weeks and reheat in a toaster. Variation: swap half the oats for almond flour for a lower-carb version, or use vanilla Greek yogurt instead of cottage cheese for tangier flavor.
