Ingredients
  

  • 4 boneless pork chops
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 1 cup sliced mushrooms
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 teaspoon fresh thyme optional

Instructions
 

  • Prep Pork Chops: Season pork chops with salt and pepper.
  • Sear Chops: In a large skillet, heat olive oil over medium-high heat. Sear pork chops 3–4 minutes per side until golden brown. Remove and set aside.
  • Cook Vegetables: In the same skillet, sauté onions and mushrooms until soft. Add garlic and cook 1 more minute.
  • Make Sauce: Stir in heavy cream, chicken broth, Dijon mustard, and thyme. Bring to a gentle simmer.
  • Combine: Return pork chops to the skillet. Spoon sauce over chops. Simmer 5–10 minutes until pork is cooked through and sauce thickens.
  • Serve: Serve pork chops hot with sauce over mashed potatoes, rice, or steamed vegetables.
