Ingredients

For the Bruschetta:

  • 1 French baguette sliced into ½-inch rounds
  • 8 oz Brie cheese sliced
  • ½ cup cranberry sauce homemade or canned
  • ½ cup pomegranate seeds
  • 1 tablespoon fresh thyme leaves optional
  • Olive oil for brushing

Instructions

Preheat the Oven:

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

Toast the Bread:

  • Brush baguette slices with olive oil and arrange them on the baking sheet. Bake for 6–8 minutes until lightly golden and crisp.

Add the Toppings:

  • Place a slice of Brie on each toast. Return to the oven for 2 minutes, just until the cheese starts to melt.

Finish with Fruit:

  • Top each piece with a small spoonful of cranberry sauce and a sprinkle of pomegranate seeds. Garnish with fresh thyme, if using.

Serve:

  • Serve warm or at room temperature. Perfect for holiday gatherings.

Notes

  • Make Ahead: Toast the baguette slices in advance and store in an airtight container. Assemble just before serving.
  • Customising the Flavour: Try fig jam or orange marmalade instead of cranberry sauce for a unique twist.
  • Serving Suggestions: Great as a holiday appetiser or on a festive charcuterie board.
  • Allergy-Friendly Options: Use a dairy-free Brie-style cheese for a vegan version.
  • Storage Tips: Best served fresh, but leftovers can be stored in the fridge and reheated gently before serving.
