PLOV RECIPE (UZBEK LAMB AND RICE PILAF)

Plov is a traditional Uzbek rice pilaf made with tender lamb, fragrant basmati rice, carrots, onions, and spices. It’s rich, hearty, and perfect for family gatherings or festive meals.

Ingredients
  

  • 2 cups basmati rice
  • 1 lb 450g lamb, cut into cubes
  • 3 medium carrots julienned
  • 2 large onions sliced
  • ½ cup vegetable oil
  • 1 head garlic whole and unpeeled
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander powder
  • ½ teaspoon paprika
  • ½ teaspoon turmeric
  • Salt and pepper to taste
  • 3 cups hot water or broth

Instructions
 

Prepare the Base:

  • Heat oil in a large pot. Add lamb and brown on all sides. Remove and set aside.

Sauté Vegetables:

  • Add onions to the same pot and cook until golden. Add carrots and cook for 5 minutes.

Combine:

  • Return lamb to the pot. Stir in cumin, coriander, paprika, turmeric, salt, and pepper.

Add Rice and Water:

  • Spread rice evenly over the lamb and vegetables. Gently pour hot water or broth on top. Do not stir.

Simmer:

  • Place the whole garlic bulb in the centre. Cover and cook on low heat for 25–30 minutes, until the rice is tender and water absorbed.

Fluff and Serve:

  • Remove the garlic bulb. Gently fluff the rice before serving.

Notes

  • Tip: For extra aroma, add barberries or a pinch of saffron before simmering.
  • Variation: Replace lamb with chicken or beef for a different twist on this classic Uzbek dish.
