Ingredients

  • 1 ½ lbs ground beef 85% lean
  • 1 medium onion finely chopped
  • 1 bell pepper green or red, finely chopped
  • 2 cloves garlic minced
  • 1 cup provolone cheese shredded
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil for sautéing
  • 1 tablespoon fresh parsley chopped (optional for garnish)

For the topping:

  • ½ cup ketchup
  • 2 tablespoon mustard
  • 2 tablespoon brown sugar

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a skillet, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and garlic, and sauté for 5-7 minutes until softened. Remove from heat and allow to cool slightly.
  • In a large mixing bowl, combine the ground beef, sautéed vegetables, provolone cheese, breadcrumbs, egg, Worcestershire sauce, salt, and pepper. Mix until everything is evenly incorporated.
  • Transfer the mixture into the prepared loaf pan and shape it into a loaf.
  • In a small bowl, mix the ketchup, mustard, and brown sugar. Spread the sauce evenly over the top of the meatloaf.
  • Bake in the preheated oven for 55-60 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).
  • Let the meatloaf rest for 10 minutes before slicing.
  • Garnish with fresh parsley if desired and serve with mashed potatoes, roasted vegetables, or a side salad.

Notes

  • You can swap provolone cheese for cheddar or mozzarella for a different flavor profile.
  • For added texture, you can use panko breadcrumbs instead of regular breadcrumbs.
  • If you like extra cheese, add a layer of shredded cheese in the center of the meatloaf.
  • For a lighter version, use lean ground turkey or chicken instead of beef.
  • Leftovers can be stored in the refrigerator for up to 3 days and can be reheated in the microwave or oven.
  • For an extra Philly cheesesteak touch, top the meatloaf slices with sautéed mushrooms or peppers.
