Pecan Pie Cobbler is a sweet, gooey dessert that blends the rich flavor of traditional pecan pie with a buttery, cake-like cobbler topping. This easy-to-make dish is a crowd-pleaser, perfect for holiday dinners or any special occasion!

Ingredients
  

  • 1 cup chopped pecans
  • 1 box 8 oz yellow cake mix
  • ½ cup unsalted butter melted
  • 1 cup brown sugar packed
  • 1 cup light corn syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ cup heavy cream

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish with butter or non-stick spray.
  • In a large bowl, whisk together the brown sugar, corn syrup, eggs, vanilla extract, and salt until smooth.
  • Stir in the chopped pecans.
  • Pour the melted butter into the prepared baking dish, then evenly sprinkle the dry cake mix over the butter. Do not stir.
  • Pour the pecan mixture over the cake mix layer. Do not mix—just pour it over the top.
  • Drizzle the heavy cream evenly over the cobbler.
  • Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean. The center should still be slightly gooey.
  • Let the cobbler cool slightly before serving. Serve warm with whipped cream or vanilla ice cream, if desired.

Notes

  • For a slightly different flavor, try using dark corn syrup or maple syrup in place of light corn syrup.
  • You can substitute the pecans with walnuts or other nuts if preferred.
  • For an extra indulgent dessert, drizzle some caramel sauce over the cobbler when serving.
  • Leftovers can be stored in the refrigerator for up to 2-3 days. Reheat in the microwave or oven before serving.
  • If you want a firmer cobbler topping, reduce the amount of heavy cream slightly.
