Ingredients
  

Pastry:

  • 1 14.1 ounce package refrigerated pie crusts (or homemade pie crust)

Filling:

  • 1 cup light corn syrup
  • ¾ cup granulated sugar
  • ¼ cup ½ stick unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 ½ cups pecan halves or pieces

Instructions
 

  • Prepare pie crust: Preheat oven to 350°F (175°C). Unroll the pie crusts on a lightly floured surface. You may need to gently roll them out slightly to make sure you have enough to cut out the circles.
  • Cut out circles: Using a round cookie cutter (about 2 ½ inches in diameter) or a glass, cut out circles from the pie crusts.
  • Prepare muffin tin: Lightly grease a mini muffin tin.
  • Shape pastry cups: Gently press each circle of pie crust into a muffin cup, forming a small cup.
  • Make filling: In a medium bowl, combine the corn syrup, granulated sugar, melted butter, vanilla extract, and salt. Whisk until well blended. Stir in the pecan pieces.
  • Fill pastry cups: Spoon about 1-2 tablespoons of the pecan pie filling into each pastry cup.
  • Bake: Bake for 20-25 minutes, or until the crust is golden brown and the filling is set.
  • Cool: Let the pecan pie bites cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
