Ingredients

  • 2 cups pecans finely chopped
  • 1 cup graham cracker crumbs
  • 1 cup brown sugar packed
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ¼ cup unsalted butter melted
  • ¼ cup maple syrup or corn syrup
  • 1 teaspoon vanilla extract
  • 12 oz semi-sweet or dark chocolate melted
  • 1 teaspoon coconut oil optional, for smoother chocolate

Instructions

STEP NO.1: PREPARE THE FILLING

  • In a large bowl, mix chopped pecans, graham cracker crumbs, brown sugar, salt, and cinnamon. Stir in melted butter, syrup, and vanilla extract until fully combined.

STEP NO.2: SHAPE THE BALLS

  • Scoop tablespoon-sized portions of the mixture and roll them into balls. Place them on a parchment-lined baking sheet.

STEP NO.3: CHILL THE BALLS

  • Refrigerate for 30 minutes to firm up.

STEP NO.4: MELT THE CHOCOLATE

  • Melt chocolate and coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring in between.

STEP NO.5: DIP IN CHOCOLATE

  • Using a fork, dip each pecan ball into the melted chocolate, coating evenly. Let excess chocolate drip off before placing back on the parchment-lined sheet.

STEP NO.6: SET AND SERVE

  • Let the chocolate harden at room temperature or refrigerate for 15 minutes. Serve and enjoy!
