Ingredients
  

Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons ¾ stick unsalted butter, melted

Filling:

  • 8 ounces cream cheese softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • ½ cup heavy cream
  • 1 teaspoon vanilla extract

Topping (optional):

  • Whipped cream
  • Chopped peanuts
  • Chocolate shavings

Instructions
 

  • Make the crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly moistened. Press the mixture firmly into the bottom of a 9-inch pie plate. You can use the back of a spoon or your hands to create an even crust.
  • Make the filling: In a large bowl, beat the softened cream cheese and peanut butter together until smooth and creamy.
  • Add powdered sugar: Gradually add the powdered sugar, beating on low speed until combined. Then, increase the speed to medium and beat until light and fluffy.
  • Add heavy cream and vanilla: In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture. Stir in the vanilla extract.
  • Fill the crust: Pour the peanut butter filling into the prepared graham cracker crust. Spread evenly.
  • Chill: Cover the pie and refrigerate for at least 4 hours, or preferably overnight, to allow the filling to set completely.
  • Garnish and serve: Before serving, top the pie with whipped cream, chopped peanuts, and chocolate shavings, if desired.

Notes

  • Graham Crackers: You can use regular graham crackers or honey graham crackers for the crust.
  • Peanut Butter: Use creamy peanut butter for the filling. Avoid using natural or "no-stir" peanut butter, as these can sometimes make the filling grainy.
  • Cream Cheese: Make sure the cream cheese is softened to room temperature before using it.
  • Heavy Cream: Use cold heavy cream for whipping.
  • Chill Time: The chill time is important for allowing the filling to set properly.
Variations:
  • Chocolate Peanut Butter Pie: Add chocolate chips or cocoa powder to the filling. You can also drizzle melted chocolate over the top of the pie.
  • Oreo Crust Peanut Butter Pie: Use Oreo cookies instead of graham crackers for the crust. Remove the cream filling from the Oreos before crushing them.
  • Reese's Peanut Butter Pie: Use Reese's peanut butter cups in the filling and as a topping. Chop the peanut butter cups and fold them into the filling.
  • Peanut Butter Banana Pie: Add sliced bananas to the filling or layer them on the bottom of the crust before adding the peanut butter filling.
  • Salted Caramel Peanut Butter Pie: Drizzle salted caramel sauce over the top of the pie.
