Ingredients
  

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions
 

Preheat Oven:

  • Preheat oven to 350°F (175°C). Grease a mini muffin pan.

Make the Dough:

  • In a large bowl, beat peanut butter, butter, granulated sugar, and brown sugar until creamy. Add egg and vanilla, mixing well. Stir in flour, baking soda, and salt until combined.

Shape and Fill:

  • Scoop tablespoon-sized balls of dough into the mini muffin cups. Press a few chocolate chips into the centre of each.

Bake:

  • Bake for 12–14 minutes until edges are lightly golden. Allow to cool in the pan for 5 minutes before removing.

Serve:

  • Enjoy warm or at room temperature.

Notes

Make Ahead: Dough can be chilled for up to 24 hours before baking.
