Mash Banana: In a jar or airtight container, mash the ripe banana with a fork until mostly smooth. A few small lumps are fine for texture.
Combine Ingredients: Add the rolled oats, milk, peanut butter, chia seeds, maple syrup (if using), vanilla extract (if using), and optional cinnamon and salt to the container with the mashed banana.
Stir Well: Stir all the ingredients thoroughly until well combined. Make sure the peanut butter is mixed in and there are no dry pockets of oats or chia seeds.
Chill: Cover the jar or container and refrigerate for at least 4 hours, but ideally overnight (8+ hours). This allows the oats to soften and absorb the liquid, and the chia seeds to swell, creating a thick and creamy texture.
Serve: The next morning, give the oats a good stir. If the consistency is too thick, add a splash more milk until it reaches your desired texture.
Add Toppings (Optional): Enjoy your peanut butter banana overnight oats as is, or enhance them with your favorite toppings.
