In a bowl, toss sliced peaches with sugar, lemon juice, and vanilla extract. Set aside to macerate while you prepare the biscuits.
Make the Biscuits:
Preheat the oven to 425°F (220°C). In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs. Gradually add milk, stirring until just combined.
Shape and Bake:
