These peach pie crumble bars feature a sweet peach filling layered between a buttery crumble crust and topping. Perfect for summer, they’re a delicious treat for any occasion and will have everyone reaching for seconds.
4cupsfresh peachespeeled and diced (about 4 peaches)
½cupgranulated sugar
1tablespoonlemon juice
2tablespoonscornstarch
½teaspoonground cinnamon
Instructions
Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper or lightly grease it.
Make the Crust & Topping:
In a large bowl, combine the flour, oats, sugar, baking powder, and salt. Stir in the melted butter until the mixture resembles coarse crumbs. Reserve about 1 cup of the mixture for the topping. Press the remaining mixture into the bottom of the prepared baking pan to form a crust.
Prepare the Peach Filling:
In a separate bowl, toss the diced peaches with the sugar, lemon juice, cornstarch, and cinnamon until well combined. Spread the peach mixture evenly over the crust.
Add the Topping:
Sprinkle the reserved crumble mixture evenly over the peach filling.
Bake:
Bake for 40–45 minutes, or until the topping is golden brown and the peach filling is bubbling. Allow to cool completely in the pan before cutting into bars.
