Ingredients
  

  • 2 cups flat-leaf parsley roughly chopped
  • 1 cup cherry tomatoes halved
  • ½ cucumber diced
  • ¼ cup red onion thinly sliced
  • ¼ cup crumbled feta optional
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon sumac or za'atar optional
  • Salt and pepper to taste

Instructions
 

Make the Dressing:

  • In a small bowl, whisk together olive oil, lemon juice, sumac (if using), salt, and pepper.

Combine Ingredients:

  • In a large bowl, toss parsley, tomatoes, cucumber, and onion. Add feta if using.

Toss and Serve:

  • Drizzle dressing over the salad and toss gently to combine. Serve immediately or chill briefly.
