8 oz 225 g wide rice noodles 2 tablespoons vegetable oil 2 cloves garlic minced 1 cup Chinese broccoli or regular broccoli chopped 8 oz 225 g chicken, beef, or tofu, sliced thinly 2 tablespoons soy sauce 1 tablespoon dark soy sauce optional for color 1 teaspoon oyster sauce 1 teaspoon sugar 1 egg optional

Prepare Noodles: Soak rice noodles in warm water until softened. Drain and set aside.
Cook Protein: Heat oil in a large skillet or wok over medium-high heat. Add garlic and protein, stir-fry until cooked through.
Add Vegetables: Toss in broccoli and cook for 1–2 minutes until tender-crisp.
Stir-Fry Noodles: Add noodles, soy sauce, dark soy sauce, oyster sauce, and sugar. Stir-fry until noodles are heated and coated evenly.
Optional Egg: Push noodles to the side, crack the egg, scramble, and mix into the noodles.
