Ingredients
  

  • 8 oz 225 g wide rice noodles
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 cup Chinese broccoli or regular broccoli chopped
  • 8 oz 225 g chicken, beef, or tofu, sliced thinly
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce optional for color
  • 1 teaspoon oyster sauce
  • 1 teaspoon sugar
  • 1 egg optional

Instructions
 

  • Prepare Noodles: Soak rice noodles in warm water until softened. Drain and set aside.
  • Cook Protein: Heat oil in a large skillet or wok over medium-high heat. Add garlic and protein, stir-fry until cooked through.
  • Add Vegetables: Toss in broccoli and cook for 1–2 minutes until tender-crisp.
  • Stir-Fry Noodles: Add noodles, soy sauce, dark soy sauce, oyster sauce, and sugar. Stir-fry until noodles are heated and coated evenly.
  • Optional Egg: Push noodles to the side, crack the egg, scramble, and mix into the noodles.
  • Serve: Serve hot with lime wedges if desired.
