These oven fried potatoes and onions are crispy, golden, and full of flavour. Baked to perfection with simple seasoning, they make a delicious side dish for breakfast, dinner, or any hearty meal.

Ingredients
  

  • 4 medium russet potatoes peeled and diced
  • 1 large onion sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried parsley optional

Instructions
 

  • Preheat Oven: Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare Veggies: Peel and dice potatoes into small cubes. Slice onion thinly.
  • Season: In a large bowl, toss potatoes and onions with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  • Bake: Spread mixture evenly on the baking sheet in a single layer.
  • Roast: Bake for 30–35 minutes, flipping halfway through, until potatoes are golden and crispy.
  • Serve: Garnish with dried parsley if desired. Serve hot.

Notes

  • Make Ahead: Dice potatoes and onions ahead, soak potatoes in cold water to prevent browning.
  • Customise: Add bell peppers for extra flavour or sprinkle cheese on top before serving.
