In a skillet, cook bacon until crispy. Drain on paper towels, then crumble. Set aside.
Sauté the Aromatics:
In a large pot, melt butter over medium heat. Add chopped onion and garlic. Cook until softened, about 3–4 minutes.
Make the Roux:
Stir in flour and cook for 1 minute, whisking constantly. Gradually whisk in chicken broth, making sure there are no lumps.
