ORANGE MAPLE GLAZED ROAST CHICKEN

Ingredients
  

For the Chicken:

  • 1 whole chicken (3-4 lbs) giblets removed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Glaze:

  • ½ cup fresh orange juice
  • 3 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon orange zest

Instructions
 

Prepare Chicken:

  • Preheat oven to 400°F (200°C). Rub chicken with olive oil, salt, and pepper.

Make Glaze:

  • In a small bowl, whisk together orange juice, maple syrup, Dijon mustard, soy sauce, garlic, and orange zest.

Glaze Chicken:

  • Place chicken on a roasting pan. Brush half of the glaze over chicken.

Roast Chicken:

  • Roast in preheated oven for 50-60 minutes, basting with remaining glaze every 15 minutes, until internal temperature reaches 165°F (74°C).

Serve:

  • Remove chicken from oven, let rest 10 minutes, then carve and serve warm.

Notes

  • Resting: Let the chicken rest before carving for juicy meat.
  • Glaze: Adjust sweetness with more or less maple syrup.
  • Serving: Serve with roasted vegetables or mashed potatoes.
  • Make Ahead: Glaze can be prepared a day ahead and stored in refrigerator.
  • Internal Temp: Always check the thickest part of chicken for 165°F (74°C).
