2 cups all-purpose flour 1 teaspoon baking powder ½ teaspoon baking soda ¼ teaspoon salt ½ cup unsalted butter softened 1 cup granulated sugar 1 cup ricotta cheese 1 large egg 1 teaspoon vanilla extract 1 tablespoon orange zest ¾ cup dried cranberries Glaze (optional): 1 cup powdered sugar 2 tablespoons fresh orange juice ½ teaspoon orange zest
