Ingredients
  

  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium potatoes peeled and diced
  • 3 cups beef broth
  • 1 cup elbow macaroni uncooked
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon olive oil for sautéing
  • Fresh parsley for garnish optional

Instructions
 

Cook the beef:

  • In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
  • Drain any excess fat, and then add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes soft and fragrant.

Add the potatoes and broth:

  • Stir in the diced potatoes, beef broth, Worcestershire sauce, and Dijon mustard. Bring the mixture to a simmer and cook for 10 minutes, or until the potatoes begin to soften.

Cook the macaroni:

  • Add the uncooked macaroni to the pot, stirring to combine. Simmer for an additional 8-10 minutes, or until the pasta is cooked and the potatoes are tender. Stir occasionally to prevent the pasta from sticking.

Make the soup creamy:

  • Once the pasta is cooked, reduce the heat to low and stir in the milk and shredded cheddar cheese. Continue stirring until the cheese is fully melted and the soup is creamy.
  • Season with salt and pepper to taste.

Serve:

  • Ladle the soup into bowls and garnish with fresh parsley if desired. Serve immediately with a side of crusty bread or crackers.

  • You can substitute ground turkey or chicken for a leaner option.
  • For extra flavor, add a few dashes of hot sauce or a pinch of red pepper flakes.
