ONE-POT CHICKEN PARMESAN MAC & CHEESE

This one-pot chicken Parmesan mac & cheese combines tender chicken, cheesy pasta, and marinara for a comforting meal. With crispy breadcrumbs on top, it’s an easy weeknight dinner that’s hearty, flavorful, and family-friendly.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, diced
  • Salt and pepper to taste
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups marinara sauce
  • 1 pound elbow macaroni uncooked
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 1 cup panko breadcrumbs
  • 2 tablespoons butter melted
  • 2 tablespoons chopped fresh parsley optional

Instructions
 

  • Cook Chicken: In a large pot, heat olive oil over medium heat. Season chicken with salt and pepper. Cook until browned and cooked through. Remove and set aside.
  • Add Pasta Base: In the same pot, sauté garlic for 1 minute. Stir in chicken broth, marinara sauce, and pasta. Bring to a boil, then reduce heat and simmer until pasta is al dente.
  • Make it Cheesy: Stir in mozzarella, Parmesan, and cream until melted and creamy. Add the cooked chicken back into the pot.
  • Top with Breadcrumbs: Mix breadcrumbs with melted butter. Sprinkle over pasta. If desired, broil for 2–3 minutes until golden and crispy.
  • Serve: Garnish with parsley and enjoy hot.

Notes

  • Make Ahead: Can be made earlier in the day and reheated in the oven before serving.
