One-Pan Garlic Herb Chicken with Potatoes & Green Beans is an easy and flavorful dinner perfect for busy nights. Juicy chicken, tender potatoes, and crisp green beans are all cooked in a garlic herb butter sauce, making a complete meal with minimal cleanup.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 lb baby potatoes halved
  • 2 cups fresh green beans trimmed
  • 3 tablespoons olive oil
  • 3 tablespoons butter melted
  • 3 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes optional
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped parsley for garnish

Instructions
 

STEP NO.1: PREHEAT OVEN

  • Preheat oven to 400°F (200°C) and lightly grease a large baking sheet.

STEP NO.2: SEASON CHICKEN

  • In a small bowl, mix melted butter, garlic, thyme, rosemary, oregano, salt, pepper, paprika, and red pepper flakes. Rub half of this mixture over the chicken breasts.

STEP NO.3: PREPARE POTATOES

  • In a separate bowl, toss baby potatoes with olive oil and the remaining garlic herb butter. Spread them onto one side of the baking sheet.

STEP NO.4: BAKE CHICKEN & POTATOES

  • Place the seasoned chicken breasts in the center of the baking sheet. Bake for 20 minutes.

STEP NO.5: ADD GREEN BEANS

  • Toss green beans with a drizzle of olive oil and a pinch of salt. Add them to the baking sheet and continue baking for 15-20 minutes, or until the chicken reaches 165°F (74°C) internal temperature and potatoes are tender.

STEP NO.6: SERVE HOT

  • Drizzle lemon juice over the chicken and garnish with fresh parsley before serving.

Notes

  • Chicken Alternatives: Use bone-in chicken thighs for extra juiciness but increase cook time by 5-10 minutes.
  • Extra Crispy Potatoes: Roast them for 10 extra minutes before adding the chicken.
  • Green Beans: If you prefer softer beans, add them earlier in the cooking process.
  • Lemon Flavor Boost: Add lemon zest to the garlic herb butter for extra brightness.
