ONE-PAN GARLIC HERB CHICKEN WITH POTATOES & GREEN BEANS

One-Pan Garlic Herb Chicken with Potatoes & Green Beans is an easy and flavorful dinner perfect for busy nights. Juicy chicken, tender potatoes, and crisp green beans are all cooked in a garlic herb butter sauce, making a complete meal with minimal cleanup.
Preheat oven to 400°F (200°C) and lightly grease a large baking sheet.
STEP NO.2: SEASON CHICKEN
In a small bowl, mix melted butter, garlic, thyme, rosemary, oregano, salt, pepper, paprika, and red pepper flakes. Rub half of this mixture over the chicken breasts.
STEP NO.3: PREPARE POTATOES
In a separate bowl, toss baby potatoes with olive oil and the remaining garlic herb butter. Spread them onto one side of the baking sheet.
STEP NO.4: BAKE CHICKEN & POTATOES
Place the seasoned chicken breasts in the center of the baking sheet. Bake for 20 minutes.
STEP NO.5: ADD GREEN BEANS
Toss green beans with a drizzle of olive oil and a pinch of salt. Add them to the baking sheet and continue baking for 15-20 minutes, or until the chicken reaches 165°F (74°C) internal temperature and potatoes are tender.
STEP NO.6: SERVE HOT
Drizzle lemon juice over the chicken and garnish with fresh parsley before serving.
Notes
Chicken Alternatives: Use bone-in chicken thighs for extra juiciness but increase cook time by 5-10 minutes.
Extra Crispy Potatoes: Roast them for 10 extra minutes before adding the chicken.
Green Beans: If you prefer softer beans, add them earlier in the cooking process.
Lemon Flavor Boost: Add lemon zest to the garlic herb butter for extra brightness.
Spicy Kick: Add cayenne pepper or extra red pepper flakes for heat.
