Ingredients

  • 2 ¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • Colored sugar or sprinkles for decorating optional

Instructions

Preheat Oven:

  • Preheat oven to 375°F (190°C). Do not line baking sheets—spritz dough needs the pan surface to grip.

Mix Dry Ingredients:

  • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

Make the Dough:

  • In a large bowl, beat butter and sugar until light and fluffy. Add egg, vanilla extract, and almond extract. Mix well. Gradually add dry ingredients, beating until fully combined.

Shape the Cookies:

  • Load dough into a cookie press fitted with your desired design. Press cookies directly onto an ungreased baking sheet.

Decorate (Optional):

  • Sprinkle with coloured sugar or nonpareils before baking.

Bake:

  • Bake for 8–10 minutes or until the edges are just turning golden. Let cool on pan for 2 minutes before transferring to a wire rack.

Notes

  • No Cookie Press? Roll dough into small balls and flatten slightly with a fork.
  • Make Ahead: Dough can be chilled for up to 3 days. Bring to room temperature before pressing.
  • Flavour Variations: Try lemon or orange zest in place of almond extract for a citrusy twist.
  • Storage: Store in an airtight container at room temperature for up to 1 week, or freeze for up to 2 months.
  • Holiday Tip: Great for cookie exchanges and decorating with kids!
