  • ½ lb ground beef or sausage optional
  • ¼ teaspoon garlic powder optional

Instructions

Cook the Meat (Optional):

  • In a skillet over medium heat, brown the ground beef or sausage until fully cooked. Drain excess fat.

  • In a medium saucepan or slow cooker, add cream cheese, Rotel (with juices), Velveeta cubes, and cooked meat (if using). Add garlic powder if desired.

Melt and Stir:

  • Cook over low heat, stirring occasionally, until everything is melted and well combined. This takes about 10–15 minutes.

Serve:

  • Transfer to a serving bowl or keep warm in a mini slow cooker. Serve with tortilla chips or crackers.

Notes

Make Ahead: Store in the fridge up to 3 days and reheat gently on the stove or in the microwave.
Keep Warm: Ideal for a slow cooker—perfect for potlucks and game day spreads.
Spicy Kick: Add jalapeños, hot sauce, or use spicy Rotel.
Meat-Free Version: Just skip the beef or sausage for a vegetarian-friendly dip.
Add-Ins: Stir in black beans, corn, or chopped green onions for extra texture and flavour.
