NO-BAKE WHITE CHOCOLATE CHEESECAKES WITH MULLED WINE FRUIT

These no-bake white chocolate cheesecakes are rich, creamy, and festive. Topped with luscious mulled wine fruit, they’re a beautiful holiday dessert that's perfect for parties and can be made ahead with minimal effort.

Ingredients
  

For the Base:

  • 1 cup digestive biscuits or graham crackers crushed
  • 4 tablespoons melted unsalted butter

For the Cheesecake Filling:

  • cups cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¾ cup heavy cream
  • ¾ cup white chocolate melted and slightly cooled

For the Mulled Wine Fruit Topping:

  • 1 cup mixed dried or fresh berries cherries, cranberries, raspberries
  • ½ cup red wine
  • 2 tablespoons orange juice
  • 2 tablespoons honey or sugar
  • 1 cinnamon stick
  • 2 cloves
  • 1 strip orange peel

Instructions
 

Make the Base:

  • Mix crushed biscuits with melted butter until combined. Press into the base of six small serving glasses or jars. Chill while preparing the filling.

Make the Filling:

  • Beat cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream to soft peaks. Fold the melted white chocolate into the cream cheese mixture, then fold in the whipped cream. Spoon over the biscuit bases and chill for at least 4 hours or until set.

Make the Mulled Wine Fruit:

  • In a saucepan, combine fruit, wine, orange juice, honey, cinnamon stick, cloves, and orange peel. Simmer gently for 10–15 minutes until the fruit is soft and the liquid is slightly reduced. Let cool completely and remove the spices.

Assemble and Serve:

  • Top each cheesecake with a spoonful of mulled wine fruit just before serving.

  • Make Ahead: Prepare up to 2 days in advance and keep refrigerated until serving.
  • Non-Alcoholic Version: Replace wine with cranberry juice or grape juice for a kid-friendly twist.
