Equipment

Ingredients
  

For the Crust:

  • 1 ½ cups graham cracker crumbs about 10-12 full sheets
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter melted

For the Lemon Cheesecake Filling:

  • 16 oz cream cheese softened to room temperature (2 blocks)
  • ½ cup granulated sugar
  • ¼ cup fresh lemon juice about 2 lemons
  • 2 tablespoons lemon zest about 2-3 lemons
  • 1 cup heavy whipping cream cold
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For Garnish (Optional):

  • Lemon slices or zest for garnish
  • Fresh berries for garnish
  • Whipped cream for topping

Instructions
 

Line Pan:

  • Line an 8x8 or 9x9-inch square baking pan with parchment paper, leaving overhang on two sides for easy removal.

Make Crust Mixture:

  • In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.

Press Crust:

  • Press mixture firmly into the bottom of the prepared pan. Use the bottom of a glass or measuring cup to press down evenly. Refrigerate while making filling.

Beat Cream Cheese:

  • In a large bowl, beat cream cheese and granulated sugar with an electric mixer until smooth and creamy.

Add Lemon & Vanilla:

  • Add lemon juice, lemon zest, and vanilla extract. Beat until well combined. Set aside.

Whip Cream:

  • In a separate cold bowl, whip the heavy cream and powdered sugar until stiff peaks form (about 2-3 minutes).

Fold Whipped Cream:

  • Gently fold the whipped cream into the cream cheese mixture until no white streaks remain. Do not overmix.

Assemble Bars:

  • Spread filling evenly over the chilled crust. Smooth the top with a spatula.

Chill:

  • Cover and refrigerate for at least 4 hours, or until completely firm (overnight is best).

Slice & Serve:

  • Use parchment overhang to lift bars out of pan. Slice into 16 squares. Garnish with lemon slices, berries, or whipped cream if desired.
