No Bake Lemon Cheesecake Bars are creamy, tangy, and refreshing with a buttery graham cracker crust and a zesty lemon filling. No oven required — perfect for spring, Easter, potlucks, and make-ahead desserts.
1 ½cupsgraham cracker crumbsabout 10-12 full sheets
¼cupgranulated sugar
6tablespoonsunsalted buttermelted
For the Lemon Cheesecake Filling:
16ozcream cheesesoftened to room temperature (2 blocks)
½cupgranulated sugar
¼cupfresh lemon juiceabout 2 lemons
2tablespoonslemon zestabout 2-3 lemons
1cupheavy whipping creamcold
½cuppowdered sugar
1teaspoonvanilla extract

Instructions
Line Pan:
Line an 8x8 or 9x9-inch square baking pan with parchment paper, leaving overhang on two sides for easy removal.
Make Crust Mixture:
In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
Press Crust:
Press mixture firmly into the bottom of the prepared pan. Use the bottom of a glass or measuring cup to press down evenly. Refrigerate while making filling.
Beat Cream Cheese:
In a large bowl, beat cream cheese and granulated sugar with an electric mixer until smooth and creamy.
Add Lemon & Vanilla:
Add lemon juice, lemon zest, and vanilla extract. Beat until well combined. Set aside.
Whip Cream:
In a separate cold bowl, whip the heavy cream and powdered sugar until stiff peaks form (about 2-3 minutes).
Fold Whipped Cream:
Gently fold the whipped cream into the cream cheese mixture until no white streaks remain. Do not overmix.
Assemble Bars:
Spread filling evenly over the chilled crust. Smooth the top with a spatula.
Chill:
Cover and refrigerate for at least 4 hours, or until completely firm (overnight is best).
Slice & Serve:
Use parchment overhang to lift bars out of pan. Slice into 16 squares. Garnish with lemon slices, berries, or whipped cream if desired.
Notes
Make Ahead: These bars need at least 4 hours to set, making them the perfect make-ahead dessert. Prepare the day before for best results.
