These Lemon Bar Cookie Cups combine the tangy sweetness of lemon with a buttery, cookie crust. Perfectly bite-sized, they’re a refreshing twist on classic lemon bars, ideal for parties, gatherings, or a sweet treat any time.
Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners. In a bowl, mix together flour, sugar, butter, egg, vanilla extract, baking soda, and salt until a dough forms. Scoop about 1 tablespoon of dough into each muffin cup, pressing it down into the bottom to form a crust.
Bake the Cookie Cups:
Bake the cookie cups for 10–12 minutes or until they are golden around the edges. Remove from the oven and allow to cool slightly while you prepare the lemon filling.
Make the Lemon Filling:
In a bowl, whisk together the eggs, sugar, flour, lemon zest, and lemon juice until smooth. Pour this lemon mixture into the partially baked cookie cups, filling them about ¾ of the way full.
