Ingredients
  

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 cup unsweetened applesauce
  • ½ cup granulated sugar
  • ½ cup brown sugar packed
  • cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans optional

Instructions
 

Preheat Oven:

  • Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups.

Mix Dry Ingredients:

  • In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.

Mix Wet Ingredients:

  • In a large bowl, combine applesauce, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth.

Combine:

  • Gradually add dry ingredients to the wet ingredients, stirring just until combined. Fold in nuts if using.

Fill Muffin Cups:

  • Divide batter evenly among muffin cups, filling each about ¾ full.

Bake:

  • Bake for 20–25 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
