These Minty Snowball Cookies are buttery, crumbly, and lightly sweet with a refreshing peppermint twist. Rolled in powdered sugar, they’re the perfect festive treat for Christmas cookie trays or wintertime snacking.

Ingredients
  

For the Cookies:

  • 1 cup unsalted butter softened
  • ½ cup powdered sugar
  • 1 teaspoon peppermint extract
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ¾ cup finely chopped walnuts or pecans optional
  • ½ cup mini chocolate chips optional

For Rolling:

  • 1 cup powdered sugar for coating

Instructions
 

Make the Dough:

  • In a large bowl, beat the softened butter and ½ cup powdered sugar until light and fluffy. Mix in peppermint extract. Gradually stir in flour and salt until combined. Fold in nuts or chocolate chips if using.

Shape the Cookies:

  • Roll dough into 1-inch balls and place on a parchment-lined baking sheet about 1 inch apart.

Bake:

  • Preheat oven to 350°F (175°C). Bake for 12–14 minutes, or until bottoms are lightly golden. Do not overbake.

Coat with Sugar:

  • Let cookies cool for 5 minutes. While still warm, roll in powdered sugar. Once fully cooled, roll again for a snowy finish.

Notes

Flavour Twist: Swap peppermint for vanilla or almond extract for a different flavour.
