Ingredients
  

For the Almond Crust:

  • 1 ¼ cups all-purpose flour
  • ½ cup almond flour
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 tablespoons cold water

For the Almond Cream Filling:

  • ½ cup almond meal
  • ½ cup powdered sugar
  • 4 tablespoons unsalted butter softened
  • 1 large egg
  • ½ teaspoon almond extract

For the Topping:

  • 24 fresh raspberries
  • Powdered sugar for dusting, optional

Instructions
 

Make the Almond Crust:

  • In a food processor, pulse flour, almond flour, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Add egg yolk and cold water; pulse until dough comes together. Chill for 30 minutes.

Prepare Almond Cream:

  • Beat butter and powdered sugar until fluffy. Add egg, almond meal, and almond extract, mixing until smooth.

Assemble the Tarts:

  • Preheat oven to 350°F (175°C). Roll out dough and cut into rounds to fit mini tart pans. Press dough into pans. Spoon almond cream evenly into shells. Top each tart with 2 raspberries.

Bake:

  • Bake for 18-20 minutes or until crust is golden and filling is set. Cool before removing from pans.

Serve:

  • Dust with powdered sugar if desired and serve at room temperature.

Notes

  • Make Ahead: Dough can be prepared and refrigerated up to 2 days before baking. Almond cream can also be made ahead and refrigerated.
